Ash-Rind Buchette

"Buchette," meaning small log in French, is a delicate, soft-ripened California original, made in the traditional style of Geotrichum-rinded goat cheese (with its beautiful mold resembling coral) from the Loire Valley.

Ours is dusted with vegetable ash and aged for 8-12 days. Each is then carefully wrapped in breathable film and snuggled into small wood cups.

Ash-Rind Buchette is mild with a delicate tang with a cream line that forms beneath the tender edible rind and spreads toward the chalky center.

Ingredients:

Cultured pasteurized goat milk, salt, vegetable ash, microbial enzymes.

All Laura Chenel cheeses are made with local, fresh milk that is pasteurized, and we use only vegetarian-approved rennet (no animal rennet).

Cooking & Preparation

Add to a cheese board with a toasted baguette. Top a salad, gratins, grilled steak or roasted vegetables.

Pairing Suggestions

Pair with a crisp white such as Sancerre or a fruity IPA.
