CROTTIN: A mild aged cheese in the
traditional French crottin shape (a 3 oz. disk), with a white surface bloom.
This is a perfect cheese for an appetizer plate with some marinated olives, sun dried tomatoes, toasted pistachios and fresh herbs. We also like to include it in boxed lunches with fresh fruit as a tasty dessert. Try it with grilled peaches in the summer!

Pair: A Chenin Blanc with floral and honey flavors would work well with the appetizer plate and chenin’s melon notes would make it an excellent choice with fruit and Crottin as a dessert.

TAUPINIÈRE: A unique, mound-shaped aged cheese. A soft white surface bloom tops an ash coating in this signature cheese. Taupiniere has a tart flavor, fresh aroma and a beautiful chalk white interior. As the cheese ages, a creamy layer develops under
the bloom.

This stylish cheese is a visual delight. It belongs on a cheese plate where its flavor and texture can shine but it also dresses up a flatbread with arugula tossed in fig
balsamic vinegar.

Pair: Sancerre or Pouilly Fume with their crisp acidity would be outstanding with our Taupiniere.
