Crottin is an aged goat cheese based on the traditional French small 3 oz. disk. Our soft-ripened Crottin begins with fresh local goat milk and is then aged for about 8 to 12 days so that it develops a bloomy wrinkled rind. It has a dense, slightly chalky texture surrounded by a downy cream line. Flavors are reminiscent of mushrooms with hints of citrus, becoming more robust with age.
This is the perfect cheese as an appetizer, dessert or even baked and placed on a salad. Crottin goes well with a piece of seasonal fruit accompanied by a glass of Chenin Blanc or an American Pale Ale.
