Terroir is one of those words Americans sometimes hear and reflect “what does that mean?” Long used in Europe to indicate the connection of flavor and quality of product to a specific location. The designation of DOC (Denominazione di Origine Controllata) in Italy and AOC (Appellation d”Origine Controlee) in France are government regulations that protect what is essentially “terroir”. They are the reason you can only produce Parmesan in the region of Parma with specific milk handled in a specific way and the reason Epoisses can only be from Burgundy in France. It stems from a history and tradition of food production that literally grew from the earth and weather in the region.

Laura Chenel’s cheeses have a fresh, bright flavor that reflects California climate and environment. Our plant is located in the Carneros region of Sonoma County – long noted for producing superior Pinot Noirs, exceptional Chardonnays and outstanding sparkling wines. It is a very unique location for wine growing with warm days and gentle fog slipping through the valley in the mornings and evenings. Our producers throughout California and their “ladies” enjoy a mild climate that creates perfectly balanced milk resulting in clean, intensely flavored cheeses.
