While Laura Chenel’s Chevre is reknown for the quality of its fresh goat cheeses, we also make a variety of superb traditional French style aged goat cheeses.

The skill and knowledge of the cheesemaker is the vital determinate here. After the fresh cheese is molded, aging culture will be used to express the character of the final cheeses. Aging cultures grow and react differently under different conditions. Our cheeses are aged in a very specific environment – controlled temperature and atmosphere. All of the detailed decisions are based on the cheesemakers experience and expertise, including size and shape of the cheeses. This is where the savoir faire of the cheesemaker establishes the flavor, texture and aroma and style of the finished cheese.
